Fugu is the collaborative vision of Bill Jones and Kirt Roberts. Some years ago they talked about one day opening an upscale sushi restaurant in Ormond Beach. Over time, that concept became reality. At Fugu, guests will be guided through a unique cultural experience while enjoying the highest quality food and service.
Our distinct menu emphasizes upscale Japanese cuisine with a twist. The palette will be challenged throughout the meal as you move from exclusive sashimi style dishes from the sushi bar to our signature Fugu filet from the kitchen. Our impressive presentations pair well with the highest quality ingredients such as Bluefin Tuna, Alaskan King Crab, Certified Japanese A5 Wagyu beef, & fresh wasabi root.
Enjoy a craft cocktail with a spectacular view of the intercoastal & the Granada bridge or dine inside in one of the most unique spaces around. Black lights highlight the art created with UV paint by local artist, Angel Lowden, to give Fugu its one of a kind nightclub vibe. For a little bit of both worlds, sit at our amazing inside/outside bar. And the giant porcelain blowfish will make sure you're having a good time!

Executive Chef Frankie Hernandez discovered his passion at 18 years old when he worked as a cook at El Conquistador, a hotel located in Puerto Rico. That same passion led him to pursue his degree in culinary arts at Le Cordon Bleu in Scottsdale, AZ. While working at Uchi in Austin, TX in 2005, Chef Frankie discovered his intense interest, love and passion for sushi.
General Manager Rosemary Neary joined the opening team of Uchi in 2003 in Austin, TX, where she discovered the beauty and depth of Japanese cuisine. Her passion for Eastern culture took her on a journey through Asian countries where she taught English for several years. Since her return, she has opened 2 more Japanese restaurants from Texas to California. She is excited to share her knowledge and passion for the culture and cuisine.
Sous Chef Marin Avila is a talented chef from Mexico City. He found his passion for Japanese food in Denver, CO and sharpened his culinary eye in Durango, CO at Bon Appetit. He looks forward to creating beautiful sushi for our community.
